Phytochemical analysis of both extracts showed the presence of oxalate, hydro cyanide, alkaloids, tannins, total flavonoids, phenol, steroids and terpenes. Flavonoids and phenol contents were higher in both extracts. The flavonoid and phenol concentrations of hexane and methanol extracts were 24.79 ± 0.01 and 25.27 ± 0.02 mg/100 g, 24.32 ± 0.02 mg/100 g and 18.66 ± 0.04 mg/100g, respectively. Hydrogen cyanide was found in lowest concentration in both extracts. Vitamins analysis showed that vitamin E had the highest composite for hexane and methanol extract. Vitamin E concentration was 3.44 ± 0.01 mg/100g and 2.95± 0.02mg/100g respectively while </span></span><span><span>vitamin B6 (</span></span><span><span>0.01 ± 0.00 mg/100g) and vitamin B1 (0.03 ± 0.00 mg/100g) were found in lowest concentration respectively. The mineral analysis showed that potassium (43.33 ± 0.04 and 27.46 ± 0.02 mg/100g) had the highest concentration for methanol and hexane extract, respectively. The results of the DPPH activity of methanol and hexane extract of </span></span><em><span><span>S. indicum</span></span></em><span><span> seeds indicated that the activity of the extract were all significantly (p&lt;0.05) lower than the values for ascorbic acid (standard) across all concentrations. However, the DPPH activity of hexane extract indicated that there was no activity in the tested concentrations below100 µg/mL. The result of the FRAP of methanol and hexane extract of SIS showed that there was no activity at the concentrations of 100 µg/ml and 400 µg/ml respectively. However, the activity observed at concentrations above 100 µg/ml and 400 µg/ml were all significantly (p&lt;0.05) lower than the same concentration in ascorbic acid. This result implies that hexane and methanol extract of </span></span><em><span><span>S. indicum</span></span></em><span><span> seeds possess nutritional and pharmacological value and can be a rich source of minerals, vitamins and antioxidative supplement.</span></span></span></span></span></span></span></p></div> </div> </div> <div class="block block-layout-builder block-field-blocknodejournalarticlefield-year-of-publication"> <div class="content"> <div class="field field--name-field-year-of-publication field--type-entity-reference field--label-above"> <div class="field__label">Year Of Publication</div> <div class="field__item"><a href="/index.php/taxonomy/term/1888" hreflang="en">2023</a></div> </div> </div> </div> <div class="block block-layout-builder block-field-blocknodejournalarticlefield-volume"> <div class="content"> <div class="field field--name-field-volume field--type-entity-reference field--label-above"> <div class="field__label">Volume</div> <div class="field__item"><a href="/index.php/taxonomy/term/1889" hreflang="en">24</a></div> </div> </div> </div> <div class="block block-layout-builder block-field-blocknodejournalarticlefield-page-range"> <div class="content"> <div class="field field--name-field-page-range field--type-range-integer field--label-above"> <div class="field__label">Page Range</div> <div class="field__item">205-214</div> </div> </div> </div> <div class="block block-layout-builder block-field-blocknodejournalarticlefield-authorname-s-"> <div class="content"> <div class="field field--name-field-authorname-s- field--type-entity-reference field--label-above"> <div class="field__label">AuthorName(s)</div> <div class="field__items"> <div class="field__item"><a href="/index.php/ukpabi-ugo-jacinta-chigozie" hreflang="en">Ukpabi-Ugo, Jacinta Chigozie</a></div> <div class="field__item"><a href="/index.php/anosike-chioma-assumpta" hreflang="en">Anosike, Chioma Assumpta</a></div> <div class="field__item"><a href="/index.php/chukwuma-enyinna-wisdom" hreflang="en">Chukwuma, Enyinna Wisdom</a></div> </div> </div> </div> </div> <div class="block block-layout-builder block-field-blocknodejournalarticlefield-k"> <div class="content"> <div class="field field--name-field-k field--type-entity-reference field--label-above"> <div class="field__label">Keyword(s)</div> <div class="field__items"> <div class="field__item"><a href="/index.php/sesamum-indicum-seeds" hreflang="en">Sesamum indicum seeds</a></div> <div class="field__item"><a href="/index.php/proximate-analysis" hreflang="en">Proximate analysis</a></div> <div class="field__item"><a href="/index.php/phytochemicals" hreflang="en">Phytochemicals</a></div> <div class="field__item"><a href="/index.php/minerals" hreflang="en">Minerals</a></div> <div class="field__item"><a href="/index.php/vitamins-0" hreflang="en">vitamins</a></div> <div class="field__item"><a href="/index.php/antioxidants" hreflang="en"> antioxidants</a></div> </div> </div> </div> </div> <div class="block block-layout-builder block-field-blocknodejournalarticlefield-i"> <div class="content"> <div class="field field--name-field-i field--type-entity-reference field--label-above"> <div class="field__label">Issue Number</div> <div class="field__item"><a href="/index.php/taxonomy/term/6" hreflang="en">2</a></div> </div> </div> </div> <div class="block block-layout-builder block-field-blocknodejournalarticlefield-file-upload"> <div class="content"> <div class="field field--name-field-file-upload field--type-file field--label-above"> <div class="field__label">File Upload</div> <div class="field__item"> <span class="file file--mime-application-pdf file--application-pdf"> <a href="/index.php/sites/default/files/2023-08/afs2023024-24208.pdf" type="application/pdf">afs2023024-24208.pdf</a></span> </div> </div> </div> </div> <div class="block block-layout-builder block-field-blocknodejournalarticlefield-doifield"> <div class="content"> <div class="field field--name-field-doifield field--type-doi_field"> <div class="field__item"> </div> </div> </div> </div> </div> </div> Sat, 05 Aug 2023 02:39:55 +0000 admin 372 at https://publications.africanscientistjournal.org Comparative Studies of the Nutritional Compositions of Ten Powdered Adult Foods Commonly Consumed in Nigeria and Their Roles in Humans https://publications.africanscientistjournal.org/index.php/comparative-studies-nutritional-compositions-ten-powdered-adult-foods-commonly-consumed-nigeria-and <span class="field field--name-title field--type-string field--label-hidden">Comparative Studies of the Nutritional Compositions of Ten Powdered Adult Foods Commonly Consumed in Nigeria and Their Roles in Humans </span> <span class="field field--name-uid field--type-entity-reference field--label-hidden"><span>daniel.akhabue</span></span> <span class="field field--name-created field--type-created field--label-hidden">Thu, 10/13/2022 - The demand for these products are also on the increase. It was against this background that ten adult powdered foods were purchased from the open markets in Benin City to evaluate their nutritive values. Consequently, the proximate analysis of the foods was determined. Additionally, the micro- and macro- mineral contents were determined with the AOAC and AACC methods. The results indicate that the moisture content was high in all the foods ranging from 7.400.21 % to 13.830.09 %. The lipid, ash, protein, fibre and carbohydrate contents were in varied concentrations from one food type to the other. Overall, the foods had high carbohydrate contents ranging from 13.120.09 % to 86.270.08 %. Most of the minerals determined were present in all the foods but in varied concentrations. The foods had high concentrations of Na, K, Ca, Mg, N and P, while the rest minerals were in low concentrations. 70 % of the foods had no detectable Mn. The concentration of sodium, potassium, calcium, magnesium, nitrogen and phosphorus ranged from 1.630.40 - 4.931.77 mg/kg, 1.260.18 - 93.001.73 mg/kg, 1.000.54 - 9.970.82 mg/kg, 1.0000 - 7.970.82 mg/kg, 1.120.53 - 8.601.82 mg/kg, and 1.350.03 - 99.140.02 mg/kg respectively. Statistical analysis of the results showed that there were significant differences in the nutrient detected in some of the foods. In conclusion, these powdered foods would be able to contribute to the dietary nutrients required daily for growth, energy utilization and storage in their consumers.</p></div> </div> </div> <div class="block block-layout-builder block-field-blocknodejournalarticlefield-year-of-publication"> <div class="content"> <div class="field field--name-field-year-of-publication field--type-entity-reference field--label-above"> <div class="field__label">Year Of Publication</div> <div class="field__item"><a href="/index.php/taxonomy/term/67" hreflang="en">2016</a></div> </div> </div> </div> <div class="block block-layout-builder block-field-blocknodejournalarticlefield-volume"> <div class="content"> <div class="field field--name-field-volume field--type-entity-reference field--label-above"> <div class="field__label">Volume</div> <div class="field__item"><a href="/index.php/taxonomy/term/68" hreflang="en">17</a></div> </div> </div> </div> <div class="block block-layout-builder block-field-blocknodejournalarticlefield-page-range"> <div class="content"> <div class="field field--name-field-page-range field--type-range-integer field--label-above"> <div class="field__label">Page Range</div> <div class="field__item">329-335</div> </div> </div> </div> <div class="block block-layout-builder block-field-blocknodejournalarticlefield-authorname-s-"> <div class="content"> <div class="field field--name-field-authorname-s- field--type-entity-reference field--label-above"> <div class="field__label">AuthorName(s)</div> <div class="field__items"> <div class="field__item"><a href="/index.php/fi-obahiagbon" hreflang="en">F.I.
